Garlic Essentials
Garlic is one of the oldest known horticultural crops in the world. It originated from the rugged arid steppes of south central Asia-- northern Iran, Afghanistan, Turkmenistan, Uzbekistan-- and has been cultivated for thousands of years for culinary and medicinal purposes. There are two subspecies of domestic garlic: Hardnecks and Softnecks and several hundred cultivars are grown world wide.

Garlic has been mentioned in the earliest medical records of each major civilization..Garlic seems to be perhaps the greatest wonder drug of all. Imagine a single pharmaceutical drug that could prevent heart attacks, reduce cancer risk, lower cholesterol, lower blood pressure, improve digestion, and act as an antibiotic. Each generation since before the time of the first scriptures has found garlic to be an indispensable medicine.

Recipes
Chicken Itza Garlic-Lime Soup
This delicate soup from the Yucatan is very popular all over Mexico. This particularl recipe is especially good for sinusitis, allergies, asthma, hay fever, the common cold, and influenza


3 corn tortillas cut in strips
oil for frying
2 chicken breasts
5 cloves garlic, chopped
6 black peppercorns
1 2-inch stick cinnamon
8 whole allspice
Small handful raisins
1 tbsp. chopped fresh oregano
4 cups chicken broth
1 tomato, peeled and chopped
6 tbspns lime juice
1 roasted peeled green chile
5 slices lime
Chopped cilantro for garnish

 
Garlic scape pesto
This recipe is a season delicacy when scapes are tender in late may and early June. Scapes are the tops of hardneck garlic that eventually form the seedpod.

0.5 lbs garlic scapes
0.5 cup pinon nuts, almonds, or walnuts
1.5 cups olive oil
2 cups grated parmesean cheese

Blend ingredients and use on pasta or as a spread. If the flavor is too strong for you consider blending in some basil or spinach.

Fry tortilla strips until crisp. remove, drain on paper towels, and keep warm. Place chicken and garlic, pappercorns, cinnamon, allspice, raisins, oregano, and broth in a pot. Bring to a rapid boil, then reduce the heat to medium, and simmer, covered, for half an hour. Let the chicken cool in the stock. Then shred the meat with fingers or forks. Strain the broth and add just enough water to make a quart of liquid. Reheat the broth with the tomato, lime juice, and chile. Add the chicken and simmer until the chicken is hot. To serve, place some the tortilla chips in the bottom of a soiup bowl, add the soup, garnish with a slice of lime and serve.
